For this edition of the PIG Project we had to reaaallllly stretch. We went all the way to Portland, Oregon to find a Belizean restaurant.
The first attempt at eating at Love Belizean was thwarted because they ran out of food before we got there. We, of course, just stomped around in despair shouting, “I can’t Belize it!”
But, we figured that being sold out was a good sign of delicious things to come and…the 2nd time we stopped by, it was open!
Love Belizean had a full compliment of Belizean hot sauces, apparently a national treasure there. Neil had a traditional chicken plate with Belizean style chicken and coconut rice and beans. I had the vegan option (duh, it’s Portland) of stewed beans and rice and salad. It was truly scrumptious. And, we added plenty of habanero sauce, of course.
Love Belizean is run by Tiffany and Andrew Love. Portland is pretty much food truck Mecca of the universe, so we shouldn’t have been surprised to find such rare and delicious food there. The chicken was really tender and delicious. The beans were tasty, and the rice divine. The different hot sauces were a real treat, some fruity, yet hot. All in all, quite marvelous. Our tenacity paid off & we really LOVEed the Belizean!
While in Portland, we also had to jump onto another Portlandia fad… VooDoo Donughts.
